Ingredients

  • 1 x 1.6k corn fed chicken
  • 25g butter
  • Few sprigs of thyme
  • 1 tsp salt
  • Black pepper
Mac 'n' Cheese
  • 75g butter
  • 15g plain flour
  • 300ml milk
  • 300ml double cream
  • 1 bay leaves
  • 1 /2onion peeled
  • 4 cloves
  • 50ml white wine
  • 1 tsp Dijon mustard (optional)
  • 300g grated cheddar cheese
  • 500g macaroni
  • 2 balls mozzarella torn

Method

Pre-heat the oven to 240C.

Pop the chicken onto a roasting tray, dot with butter, sprinkle over the salt and thyme and pepper and roast for 1 hour – 1 hour 15 minutes.

To make the mac ‘n’ cheese, heat the milk and cream, stud the onion with the bay and cloves, add to the milk and cream mix and gently bubble to infuse for 10 minutes. Melt the butter in a pan, whisk in the flour and then add the milk mix, mustard (optional) and wine.

Cook the pasta as per the packet instructions.

Add ½ the cheese to the sauce and take off the heat season.

Drain the pasta, season the sauce, then pour onto the pasta and mix together, pour into an ovenproof dish, and top with the cheese. Pop under the grill for 5 minutes.

Pop the chicken onto a platter and serve with the mac ‘n’ cheese.
