Roast Shoulder Of Pork with Black Pudding and Caramelised Apple Sauce

James' Roast Shoulder Of Pork with Black Pudding and Caramelised Apple Sauce is a fantastically tasty dish. The pork, the sauce, the apples and the black pudding provide layers of flavour which are topped off with crispy crackling!

Ingredients

  • 4k pork loin, scored
  • 2tbs sea salt
  • 400g black pudding
  • 50g butter
Apples:
  • 2 jars of apple sauce blitzed
  • 50g butter
  • 6 red apple, diced
Sauce:
  • 100ml red wine
  • 300ml veal jus
  • Knob of butter

Method

Pre-heat the oven as high as it will go – around 240c.

Rub salt over the top of the pork and put into the oven on a big roasting tray then put in the oven. After 30 minutes open the door, turn the oven down to 150c and cook for a further hour and a half.

To make the sauce, add red wine to a hot pan, add the veal jus, bring to the boil and reduce by half, finish with a knob of butter.

Slice the black pudding into thick rounds, pan fry in butter until crisp flip over and take off the heat.

For the apples, pan fry in butter, blitz the jars of apple sauce and stir through the cooked apples.

To serve, slice the pork, sit on a plate with the black pudding and apples and spoon over sauce.
