Ingredients
- 2 Avocados, cut into sixths
- 750g chicken wings
- 2 red onions peeled and cut into 1/6ths
- 300g purple sprouting broccoli
- 100ml ginger chilli sauce
- 75ml maple syrup
- 50 ml olive oil
- 2 limes, juiced and zested
- salt and pepper
- 1 small bunch coriander
- 1 small bunch mint
- 200ml thick Greek yoghurt or crème fraiche
- Chilli fronds
Method
Pre heat the oven to 200c. Place the chicken wings into a tray, drizzle in oil season and then roast in the pizza oven for 10 to 12 minutes. Drizzle in maple syrup and ginger sauce and roast for a further 2 minutes.
Meanwhile place the vegetables into another tray and roast alongside the wings until charred. Spoon onto a platter, sprinkle over the herbs, squeeze and zest over the limes, dot with yoghurt, sprinkle over chilli fronds and serve.
