Ingredients

  • 1kg mussels
  • 4 x 200g cod portions
For the soup
  • 50ml olive oil
  • 1 shallot diced
  • 100g lardons diced
  • 100g serrano ham diced
  • 2 cloves garlic sliced
  • 150ml white wine
  • 1 tsp Smoked paprika
  • 2 slices Toasted sourdough cut into squares
  • Selection of sea herbs
  • Few sprigs parsley chopped

Method

  • Heat a BBQ until hot and the coals have turned white, or preheat an oven to high.
  • For the mussels, add ½ the oil, shallots and the wine to a large pan. Carefully add the gently add the mussels, put a lid on and cook for 2 to 3 minutes.
  • Drain, keeping the liquor and pick the meat from the mussels.
  • In the same pan, fry the lardons in the rest of the oil. When crisp, add the garlic, cooking liquor and smoked paprika.
  • Cook for a couple of minutes then finish with the parsley and bread.
  • Pan fry the cod in olive oil season then roast for 5 to 6 minutes. Pop the ham in for the last 2 minutes.
  • Spoon into bowls, top with cod and sprinkle around sea herbs.
