Salad Dressings: French, Balsamic, Chardonnay and Asian Dressings

Hopefully sunny days are on their way, which means summer salads. Choose from French, Balsamic, Chardonnay and Asian dressings to ensure your salad tastes fabulous!

Ingredients

French Dressing
  • 150ml veg oil
  • 50ml white wine vinegar
  • 1 tbs Dijon mustard
  • Splash of water

To serve: 100gFrench beans and 100g asparagus blanched and drained

Balsamic Dressing
  • 1 tbs balsamic
  • 3 tbs olive oil
  • Salt and pepper

To serve: 4 Sliced heritage tomatoes,1 ball mozzarella torn.

Chardonnay Dressing
  • 75ml veg oil
  • 75ml olive oil
  • 50ml Chardonnay vinegar
  • 1 tbs Dijon mustard
  • Splash of water
  • ½ shallot diced
  • Few sprigs chervil chopped

To serve: 100g Mixed salad leaves

Asian Dressing
  • 15ml soy sauce
  • 15ml rice wine vinegar
  • 1 lime juiced
  • Pinch sugar
  • 2 tbs chopped coriander
  • ½ a chilli diced

To serve: 100g mushrooms sliced and a few salad leaves and a few blanched asparagus and green beans.

Method

French Dressing

Whisk everything together, spoon over the vegetable whilst still warm.

Balsamic Dressing

Whisk everything together, spoon over tomatoes and mozzarella.

Chardonnay Dressing

Whisk everything together spoon over the leaves.

Asian Dressing

Whisk everything together spoon over the leaves, mushrooms, asparagus and green beans.
