Ingredients
- 4 squid cleaned cut into strips
- 150g gluten free sr flour
- 100ml cider
- 1 tsp black pepper coarse
- 1 tsp salt
To serve:
- Chilli jam
- Micro coriander
- Lime wedges
- 4 large squid cleaned, scored and 1/2d
- 100ml Olive oil
- 2 lemons juice and zest
- 100g rocket
- 2 sliced chillies
Method
Salt and pepper squid with chilli jam
Heat a deep fat fryer to 180c
Whisk together the flour and cider and pepper coat the squid fry in batches drain.
Spoon the jam onto plates top cream and lime mix top with squid herbs and lime wedges.
Chargrilled Squid
Heat a BBQ until hot and the coals are white.
Char the squid on the BBQ brushing with some of the oil for 1 to 2 minutes, pop on a platter squeeze and zest over lemons sprinkle over chillies and rocket, drizzle in olive oil.
