Sardines with Tomatoes Two Ways

Sardines are a great oily fish, high in omega-3. These recipes for Sardines with Tomatoes Two Ways are quick and easy to rustle up and contain flavoursome ingredients like basil, garlic and fresh herbs!

Ingredients

  • 4 sardines, gutted and scaled, backbone removed
  • 4 whole sardines gutted
  • 25ml olive oil
For the Sauce
  • 1/2 red onion, peeled and sliced
  • 2 cloves garlic, sliced
  • 8 large tomatoes sliced
  • 1 small bunch basil torn
  • 2 slices charred bread
  • 1 tsp sherry vinegar
  • Salt and pepper
To serve
  • 2 tbs herb oil
  • 2 tbs green olives
  • A few garden herbs
  • 2 tomatoes 1/4d
  • A few basil leaves

Method

Pre heat the bbq until hot and the coals are white.

Pop the onion, garlic, tomatoes, basil and vinegar into a large food processor. Blitz for 1 minute, tip ½ into a bowl, add the croutons and stir through.

Add 1 whole deseeded cucumber to the mixer and blitz for 1 minute. This is the gazpacho sauce.

To serve, pop onto a plate, top with basil and drizzle over olive oil.

Place the sardines that are butterflied into a hot pan on the BBQ with a drizzle of oil. Cook for 1 minute and flip over.

Place the whole sardines on to the BBQ, drizzle in oil, cook for 1  to 2 minutes then flip over for another minute and then season.

To serve the fillets spoon the gazpacho sauce onto a plate, top with fillets and herb oil .
