Ingredients
- 75ml cider vinegar
- 75ml Water
- 50g caster sugar
- pinch of salt
- 4 radish some sliced
- 1 carrot
- 1 courgette
- ½ cucumber
- ¼ kohlrabi
- 1 tbs olive oil
- 2 x 250g tuna steaks
- Salt and pepper
- 1 tbs white sesame seeds
- 1 tbs black sesame seeds
Method
Place the vinegar, water and sugar into a pan, bring to the boil then add the veg using a melon baller to scoop out the carrot, courgette, cucumber, kohlrabi. Pop into the pickle add the radish, take off the heat.
Oil the tuna steaks and season. Cook in a very hot BBQ for 1 minute on each side then coat the top and bottom of the tuna in sesame seeds.
To serve, slice the tuna and place the pickles on the plate. Top with tuna. Decorate with bronze fennel leaves and savoury leaves.
