Ingredients

  • 2 x 200g sirloin beef steaks

For the Slaw

  • ¼ red cabbage, thinly sliced
  • 1 apple sliced
  • ¼ celeriac thinly sliced
  • Spring greens

For the pesto

  • 1 green chilli, sliced
  • 50g fresh coconut
  • 50ml ponzu
  • 25ml sesame oil
  • 2 limes, juiced and zested
  • 1 bunch coriander
  • 1 bunch mint

Knob of ginger grated

Method

  • Heat a BBQ until hot and the coals are white
  • Put the steak into a tray with the oil then pop on the BBQ and cook for 2 minutes on each side until charred  season  pop in the oven for 5 minutes.
  • To make the pesto, pound all the ingredients together in a pestle and mortar , Stir ½ of this through the veg mix and pile it onto a platter.
  • To serve rest the beef slice pop onto a platter with the veg and spoon over the sauce.
