Ingredients

Skate
  • 2 x 250g skate wings
  • 1 tbsp plain flour
  • salt and pepper
  • 25ml veg oil
Sauce
  • 150g butter
  • 2 tbsp small capers
  • 1 lemon, juiced
  • 1 lemon, segmented
  • 1 small bunch of parsley, chopped
Croutons
  • 1 slice bread, cubed
  • Vegetable oil, for frying

Method

  1. Preheat the oven to 220°C.
  2. Pan fry the croutons in vegetable oil until crisp, then drain.
  3. Season the flour then coat the skate, dusting any excess off. In a large frying pan, heat the oil and cook the fish for 2 mins. Then flip over and cook in the oven for 8-10 mins.
  4. To make the sauce, put the butter in a large pan and heat until nut brown, then add the capers and lemon juice and segments and parsley.
  5. To serve, put the skate onto a plate, spoon over the sauce and decorate with croutons.
