Ingredients
- 3k rolled pork loin, scored
- 400ml veal jus
- 25g butter
- 2 apples diced
- 1 tsp cumin ground
- 1 tsp coriander ground
- 1 tsp curry powder
- Knob of butter
- Splash of water
- A few Sage leaves
- Mashed potato
Method
Pre-heat the oven to 250c.
Place the pork into a large roasting tray and place into the oven after 30 minutes turn the oven down to 150c and cook for a further 2 to 21/2 hours.
Bring the jus to the boil and then reduce by half finish with the butter. Pop all the ingredients into a pan for the apple sauce bring to the boil then simmer for 5 minutes.Deep fry the sage at 160c until crisp drain.
To serve slice the pork , pop onto a plate with mash ,apple sauce sage and drizzle over the sauce .
