Ingredients

For the pasta:
  • 200g 00 flour
  • 200g semolina flour
  • 5 eggs
For the sauce:
  • 400g tin chopped tomatoes
  • 3 cloves of garlic crushed
  • A pinch of dried chilli
  • 50ml olive oil
  • Salt and pepper
  • 1 small bunch basil, shredded
To serve:
  • Grated parmesan
  • 4 slices sourdough
  • 4 slices cheddar cheese

Method

To make the pasta, add the dry ingredients to a food processor and slowly add the eggs until it forms a dough. Cling film the pasta dough and let it rest for thirty minutes in the fridge.

Put the garlic, oil, dried chilli, tinned tomatoes and ¾ of the basil into a large pan over a medium heat and bring to the boil. Simmer for 5 minutes.

Roll the pasta out through a pasta machine, starting with a thick setting and continuing until it is on the thinnest setting, then cut into spaghetti. Place onto a tray with a dusting of semolina flour.

Toast the bread on both sides then top with remaining basil and cheddar cheese then grill until the cheese is bubbling.

Cook the pasta in boiling, salted water for 1 minute. Lift into the tomato sauce, mix thoroughly and season. Put the cheese toast onto plates then top with spaghetti and grated parmesan.
