Ingredients
- 500g beef mince
- Salt and pepper
- 15ml olive oil
- 1 tin chopped tomatoes
- 1 onion, peeled and diced
- 2 cloves garlic, chopped
- 6 – 8 sprigs oregano
- 50ml white wine
- 50ml sherry
- 1 star anise
- 1 tablespoon pimento (smoked paprika)
- 1 jar roasted red peppers, chopped
- 1 small bunch of parsley
Method
Season the beef and roll into 12 even sized balls. Heat half the oil in a non-stick pan over a medium heat and, when hot, add the meatballs and cook for 8 to 10 minutes.
Meanwhile in another pan, heat the rest of the oil over a medium heat. Fry the onion and garlic for a minute, add the oregano, wine, tomatoes, peppers, pimento, sherry and star anise then bring to the boil and simmer for 5 minutes.
Add the meatballs and cook for a few more minutes, coating them in the sauce then remove the star anise, add the parsley and seasoning, stir and serve.
