Ingredients
- 4 onions
- 300ml bitter
- 300ml beef stock
- 25ml olive oil
- 400g sirloin steak, 5cm thick
- Salt and pepper
- 100g butter
- 1 clove of garlic, crushed
- A few sprigs of rosemary
Method
Place the whole onions in a pan with the beer and beef stock. Bring to the boil then simmer for 40 minutes.
Heat the BBQ until hot and the coals are white.
Cut the onions in half horizontally, then drizzle with oil. BBQ flat side down for a couple of minutes until charred, then put to one side.
For the beef, place on the BBQ and cook for 2 minutes. Flip over and cook for another 2 minutes, then rest the steak for 4 minutes. Sprinkle over an oxo cube.
To serve, slice the steak and place onto a platter with the onions.
