Ingredients
- 250g plain flour
- 1 tsp baking powder
- 1 tsp caster sugar
- 3 eggs
- 200ml milk
- 2 tbs chopped spring onions
- 100g diced potatoes, blanched
- 2 tomatoes, concassed
- Few sprigs of tarragon
- 2 bulbs garlic roasted for 30 minutes
- 150g butter softened
- 2x 150g sirloin steak
- 25g butter, cubed
- Salt and pepper
- 200ml veal jus
- Splash of madeira
- Knob of butter
Method
Heat a non-stick frying pan to hot, season the steaks, melt the butter. When foaming, add the steaks and cook for 3 minutes, then flip over and cook for 2 minutes
Beat together the butter, tarragon and garlic.
Put the veal jus and madeira into a pan and bring to the boil. Reduce by half, finish with butter.
Heat a waffle machine to high. To make the waffles whisk all the ingredients together, ladle into a waffle machine and cook until golden. To serve, pop the waffles and steak onto a plate, top with garlic butter and spoon over the sauce.
