Ingredients

Fish
  • 4 x lemon sole fillets or brill
Sauce
  • 1 tbs vegetable oil
  • 2 cloves garlic peeled and grated
  • 2 tbs ginger, peeled and grated
  • 2 spring onions, sliced
  • 100g fermented beans, rinsed and crushed
  • 2 tbs shoaxing wine
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbs coriander
  • 200g broccolini
To serve
  •  2 spring onions, sliced

Method

Heat the BBQ until hot and the coals are white.

Place the fish on paper in a steamer, season, pop on the lid and cook for 5 minutes. Put  the broccolini on the BBQ and cook for 3 minutes.

To make the sauce, heat a large frying pan, fry the garlic, ginger and beans in the oil add all the remaining ingredients bring to a bubble then add the broccolini, stir through.

To serve spoon the sauce and broccolini onto a plate, top with fish zest, sprinkle over onions.
