Ingredients
- 8 lamb chops
- Salt and pepper
- 200g feta cheese
- Few sprigs rosemary
- 8 sunblush tomatoes
- 50ml olive oil
- ½ aubergine diced
- 1 courgette, diced
- 1 red pepper diced
- 2 tomatoes, diced
- 1 red onion, peeled and diced
- 2 cloves garlic, peeled and crushed
- 1 small bunch of basil
- Salt and pepper
Method
Heat a grill to high.
Make a pocket in the lamb chops, stuff with cheese, herbs and tomatoes. Season and pop under the grill for 8 minutes.
To make the ratatouille, heat a pan until hot, add the oil onions and garlic. After a minute add the courgettes, after another minute add the aubergines, after another minute add the peppers, then stir through the tomatoes and basil and season gently. Simmer for another 2 minutes.
To serve pile, the ratatouille into a bowl, place the lamb on top. Drizzle in olive oil if desired.
