Ingredients

  • 20-25 lamb chops
  • 1 tsp green cardamom powder
  • 8 tablespoon white vinegar
  • 2/3 birds eye green chillies, made into a paste
  • 6 tbsp ginger and garlic paste
  • 2 tsp salt or to taste
  • 1 ½ tsp red chilli powder
  • 2 tsp garam masala
  • 120g raw papaya (made into a paste), use water or vinegar to mix
  • ½ tsp orange deep food colour powder, optional
  • 3 tbsp dried fenugreek leaves, crushed into a powder
  • 2 tablespoons fresh chopped coriander for garnishing
  • 2 tbsp melted butter, brushing over on barbecue

Method

Mix all the ingredients together into a bowl thoroughly using a whisk

Add lamb chops to the marinade and coat the lamb chops using your hands to mix.

When the lamb chops are marinated, cover the bowl and leave in the refrigerator for a minimum of 2 hours (or preferably overnight for the meat to flavour better).

Cook over the barbecue (use butter to brush over whilst cooking) or cook in the home oven on 180ºC for 12-15 minutes, depending on how you want your lamb cooked
