Taramasalata with Crudités

Taramasalata is a traditional Greek dish made from salted and cured fish roe, olive oil, lemon juice and water. It is creamy and delicious! It is great served with crudités or bread!

Ingredients

  • 200g cods roe, skinned (and passed through a sieve)
  • 200ml olive oil
  • Touch of water
  • Juice of a whole lemon
To serve:
  • 1 bunch radish washed
  • 10 baby carrots
  • Toasted sourdough
  • Baby cucumbers
  • Endive leaves
  • Olive Oil for drizzling

Method

To make the taramasalata, add the cod roe with a touch of water into the food processor and blitz. Gradually add the oil while mixing, alternating with the water.

Serve the taramasalata in a bowl, with crudites and toasted sourdough on the side.
