Mix all the ingredients for the stuffing together and then carefully place evenly under the skin of the chicken.
Pop the chicken on to an oven proof dish along with the chilli, lemongrass and water. Season and roast for 1 hour, until fully cooked. Cut into portions.
Chop all of the ingredients together for the salsa and set aside.
BBQ the broccolini until charred, or place into a hot oven until cooked.
Scatter the broccolini over a platter, top with the chicken and spoon over the Thai salsa.
