Ingredients

  • 1 large corn-fed chicken
  • A few chillies
  • 1 lemongrass
  • 300ml water
For stuffing
  • 200g minced chicken
  • 2 cloves garlic
  • 1 lemongrass
  • Small bunch Thai basil
  • Small bunch coriander
For the Thai Salsa
  • 2 cloves garlic
  • 2 green chilli
  • 1 shallot, diced
  • 1 small bunch coriander
  • 1 small bunch mint
  • 1 small bunch Thai basil
  • 50g palm sugar
  • 15ml fish sauce
  • 25ml soy sauce
  • 100ml olive oil
To serve
  • 300g broccolini

Method

  • Pre heat the oven to 200°C or BBQ until hot.
  • Mix all the ingredients for the stuffing together and then carefully place evenly under the skin of the chicken.
  • Pop the chicken on to an oven proof dish along with the chilli, lemongrass and water. Season and roast for 1 hour, until fully cooked. Cut into portions.
  • Chop all of the ingredients together for the salsa and set aside.
  • BBQ the broccolini until charred, or place into a hot oven until cooked.
  • Scatter the broccolini over a platter, top with the chicken and spoon over the Thai salsa.
