Ingredients

  • 4 tostadas
  • 200g tuna
  • 1 lime juice and zest
  • ½ red chilli diced
  • 4 butterflied sardines
  • A little oil
  • Salt and pepper
For the salsa
  • 1 advocado diced
  • 1 large tomato diced
  • 1/2 red onion diced
  • 1 tbs coriander chopped
  • 1 tbs mint chopped
Ponzu Dressing
  • 4 tbs yuzu
  • 2 tbs ponzu
  • 2 tbs mirin
  • Few micro coriander leaves
  • Herb oil

Method

Heat a BBQ until the coals are hot and white

Grill the sardines for 2 minutes.

Slice the tuna then dice.

Whisk all the ingredients together for the dressing  Add the lime zest and juice to the tuna with the chilli mix together. To make the salsa combine the advocado and tomatoes herbs and onions.

To serve pile the veg mix onto Tostados  top   with tuna and  with sardines sprinkle over herbs drizzle over herb oil.
