Ingredients

  • 600g tuna steak
  • 15ml veg oil
Dressing
  • 50g fresh wasabi grated
  • 1 green chilli
  • 100g palm sugar
  • 50g tamarind
  • 100ml water
  • 1 small bunch mint
  • 1 small bunch coriander
  • 2 limes juice and zest
Salad
  • 1 bunch watercress
  • 1 mango, peeled and sliced
  • Radish

Method

To make the dressing, place all the ingredients  into a pestle and mortar and pound .

Brush the tuna with oil and pan fry for 1 to 2 minutes on each side. Slice.

To serve, place the tuna onto a platter top with salad drizzle over dressing
