Ingredients
- 8 sausages
- 25ml olive oil
Sauce
- 400g pork mince
- 1 onion, peeled and diced
- 1 clove of garlic, peeled and sliced
- 1 green chilli, diced
- 200g brown sugar
- 100ml ketchup
- 50ml soy sauce
- 50ml white wine vinegar
- 2 tbsp chipotle paste
- 1 small bunch of coriander, chopped
- 1 small bunch of mint, chopped
- 1 baguette, cut and toasted
- 2 baby gem lettuces
- 1 small bunch of coriander, chopped
- 1 small bunch of mint, chopped
- 2 chillies, sliced
- Fried onions and garlic slices
Method
Pre-heat the oven to 200C.
Heat a non-stick frying pan. When hot, add all the ingredients for the sauce. Bring to the boil, then simmer for 10 minutes, stirring occasionally.
Drizzle the sausages in oil and fry them in a non-stick pan until golden. Pop in the oven for 10 minutes.
To serve, pop the baguette onto a platter. Fill the centre with lettuce leaves, pile the sausages on top, then spoon over the sauce, chillies, onions, garlic and herbs.
