Ingredients

For the butter
  • 200g butter softened
  • 1 bunch watercress chopped finely
For the Soda Bread
  • 170g self raising brown flour
  • 170g plain flour
  • ½ tsp salt
  • 1 tsp bicarbonate of soda
  • 300ml buttermilk
  • 1 bunch watercress, chopped finely
For the soup
  • 2 bunches watercress
  • 200g cooked jerseys royals
  • 1 l full fat milk
  • To serve cream herb oil sprigs of watercress.

Method

  1. Preheat the oven to 200°C
  2. Put all soda bread ingredients together in a large bowl and mix to form a dough. Shape into a circle and push down, they should be 20cm round and 3cm deep. Dust with a little flour and cut a cross onto the top. Bake with at 200 °C for 20 minutes.
  3. To make the butter beat together the watercress and butter spoon into a serving dish.
  4. To make the soup pop the milk into a pan with the potato bring to the boil season add to the watercress and blitz . Ladle into bowls, drizzle in cream, herb oil, dot with sprigs of watercress.
