Ingredients

  • 300ml strong Yorkshire tea, hot
  • 200g raisins
  • 100g glace cherries, chopped
  • 150g mixed peel
  • 200g dark brown soft sugar
  • 225g self-raising flour
  • 1 tsp mixed spice
  • ½ tsp baking powder
  • 1 egg
To serve:
  • 2 tablespoon runny honey
  • Butter to spread

Method

Pre heat the oven to 170c.

Grease 2 x 1 lb loaf tin.

Place the mixed fruits into a bowl, pour over the hot tea and soak for 30 minutes. Add the remaining ingredients and mix thoroughly then spoon into the tins.

Place in the oven and bake for 1 hour. Remove then allow to cool.

Slice and spread with butter and a drizzle of honey if desired.
