Elounda pancakes with syrupy fruits


200g plain flour

10g baking powder

2 eggs

275ml milk

pinch of salt


For the fruits;

100ml honey

100ml water

1 orange, juice of

5g ground cinnamon

5g ground cumin

50g sesame seeds toasted

150g fresh cherries stoned

2 peaches cut into8’s

1.Whisk together the flour, baking powder, eggs and milk, set to one side.

2.In a saucepan mix the honey, water, orange juice, spices and sesame seeds, warm through gently until all mixed, add the fruit and take off the heat.

3. To make the pancakes lightly drizzle a fry pan with olive oil, spoon the mixture into the pan using a desert spoon, once the edges of the pancakes are slightly brown flip them over.

4. Serve the pancakes warm with several spoonfuls of the fruit and syrup.
