Ingredients

  • 1x 1.2k chicken, cut into 8
  • 25g butter
  • 5 garlic cloves, crushed
  • 3 shallots, peeled and 1/2d
  • 150g pancetta lardons
  • Fresh thyme
  • 350g chestnut mushrooms, 1/2d
  • 500ml red wine
  • 500ml chicken stock
Waffles:
  • 250g plain flour
  • 1 tbs baking powder
  • 3 medium eggs
  • 425ml milk
  • 200g cooked 1 cm diced potatoes
  • 4 tomatoes concassed and diced
  • 1 bunch tarragon picked

Method

Soak the portioned chicken in wine and bay overnight in fridge.

In a large pan fry the pancetta lardons until crispy, spoon onto a plate then brown the chicken in the bacon fat until golden brown. Season, pop into an oven proof dish.

In the same pan add the onions, garlic wine and chicken stock bring to the boil, pour over the chicken cook in the oven with a lid off for an hour.

To make the waffles, heat a waffle machine, dot with butter then whisk all the ingredients together and ladle in 2 at a time. Keep warm in the oven.

Serve a waffle per person with a big spoonful of coq au vin.
