Ingredients

Sardines with tomatoes on toast
  • 12 sardines, butterflied
  • 25 ml olive oil
  • 2 tomatoes, grated
  • 50 ml olive oil
  • Salt and pepper

To serve:

  • 4 slices sourdough, charred/ toasted
  • Squeeze of lemon
Sardines with lemon parsley dressing
  • 12 sardines, gutted
  • 1 lemon, juice and zest
  • 50 ml of olive oil
  • Small bunch of parsley, chopped
  • 1 clove of garlic, grated
  • Salt and pepper

Method

Sardines with tomatoes on toast

Heat a BBQ until hot and the coals are white

Place the sardines onto a bbq rack, spray in oil and vinegar, mix, season and grill for 2 minutes. Flip over and cook for 1 minute.

Mix the tomato pulp, olive oil and garlic together.

To serve, sit the charred bread onto plates, spread over the tomato mix then sit the sardines on top.

Place the sardines onto a large bbq rack spray in the oil vinegar mix  season and grill for 2 minutes. Flip over and repeat.

Mix the lemon, oil, parsley and garlic together

To serve, pop the sardines onto plates and spoon over dressing.
