Beef Fillet, Mozzarella and English Relish Salsa with Greenhouse Tomatoes

This Beef Fillet, Mozzarella and English Relish Salsa with Greenhouse Tomatoes recipe is so great for cooking on the BBQ. Served rare with fresh tomatoes from the garden this is the food that James likes to eat!

Ingredients

Beef Fillet
  • 2x200g Centre Cut
  • 15ml olive oil
  • Salt and pepper
  • Few sprigs of thyme
  • 3 green tomatoes sliced
  • 2 balls mozzarella
English Salsa Verde
  • 1 Bunch Parsley
  • 2 Cloves Garlic, peeled
  • 50g Capers
  • 1 green tomato chopped
  • 1 Tbspn Gentlemans Relish Paste
  • 1 Bunch Basil
  • 50g green olives stoned
  • 250ml  Olive Oil
  • ½ lemon juice only
  • Pepper and Sea Salt

Method

Heat a BBQ until hot and the coals are white.

Oil and season the steaks, sprinkle in thyme, cook for 8 to 10 minutes turning when charred, rest.

To make the salsa put everything into a pestle and mortar, crush until fairly smooth. Use some of this to dress the sliced tomatoes.

To serve, sit the dressed sliced tomatoes in the centre of the plate, top with steak then mozzarella and finally more salsa.
