Ingredients

  • 125 ml balsamic vinegar
  • 100g raspberries
  • 140g rocket
  • 140g baby leaf spinach
  • 200g strawberries, quartered
  • 100g blackberries
  • 50g blueberries
  • 90g goat’s cheese, crumbled

Method

Put the balsamic vinegar into a small saucepan together with 40g raspberries and bring to the boil, mashing raspberries a little to break them down.

Reduce the heat and simmer for 10 minutes, stirring occasionally, then remove from the heat and allow to cool.

Gently toss together the rocket, spinach, the remaining raspberries and other berries, and serve on 4 plates.

Top with crumbled goat’s cheese, and drizzle with the raspberry vinegar.
