Ingredients

  • 2 lobster tails
  • 50g butter
  • 1 shallot
  • 100ml white wine
  • 300ml chicken stock
  • 100ml double cream
  • 1 tsp Dijon mustard
  • ½ lemon juice
  • Parsley
  • Chervil
  • 30g grated parmesan
To serve
  • Green salad
  • AB skinny chips

Method

Heat the grill to high.

Split the lobster tails from top to bottom and pop onto a baking tray, shell side down.

Heat the butter, soften the shallots and add the wine, shells, stock and cream, bring to the boil and reduce by half. Sieve off, season, add the Dijon mustard, lemon and herbs and spoon over the lobster. Sprinkle over the cheese and grill for 5 mins on high .

Serve with green salad and chips.
