Ingredients

Recipe 1
  • 2 mackerel filleted
  • 25ml olive oil

Sauce

  • 1 /2 a shallot, peeled and diced
  • 2 cloves garlic, chopped
  • 1 x 400g chopped tinned tomatoes
  • 1 small bunch basil torn
  • Pinch of chilli flakes
  • 50ml olive oil
  • salt and pepper
Recipe 2
  • 2 large potatoes peeled and very thinly sliced
  • 75ml clarified butter
  • Drizzle of veg oil
  • 2 mackerel fillets, cut on ½
  • 50g black pitted olives
  • Few sprigs oregano
  • 12 sunblush tomatoes
Recipe 3
  • 2 whole mackeral gutted and scored
  • 25ml olive oil
  • Sauce as above

Method

Recipe 1

Pre heat the BBQ until the coals are white.

Place the fish onto a large baking tray, drizzle in oil, season and grill for 5 minutes.

For the sauce, place all the ingredients into a pan, bring to the boil then simmer for 2 to 3 minutes, serve with the fish.

Recipe 2

Pre heat the oven to 220c.

Place the potatoes into the bottom of an oven proof dish, drizzle in the butter and oil roast for 10 minutes until crisp, then top with mackerel, olives and oregano and roast for a further 5 minutes. Dot with tomatoes and serve.

Recipe 3

Heat the BBQ until hot and the coals are white.

Place the oil and mackeral onto the BBQ cook for 2 to 3 minutes until charred flip over and repeat.
