Ingredients

For the cake:
  • 300ml Guinness or other stout
  • 150g dark chocolate
  • 200g butter
  • 500g soft light brown sugar
  • 4 eggs
  • 350g self raising flour
For the icing:
  • 400g cream cheese (full fat)
  • 25ml Guinness
  • 200g icing sugar
To garnish:
  • Dark chocolate, grated

Method

Preheat the oven to 160°C.

Melt the chocolate and butter with Guinness over a bain marie. Cool slightly, then whisk in the eggs and sugar, then fold in the flour.

Line a 25cm deep cake tin with greaseproof paper, pour the cake mix in and bake for 1 hour. Remove from the oven and leave to cool.

To make the icing, whisk together the cream cheese, icing sugar and Guinness.

Pour the icing onto the cake, spread with a palate knife for an even thickness, then grate the chocolate over the top.
