Ingredients

  • 100g butter softened
  • 100g light muscavado sugar
  • 1 vanilla pod
  • 1 egg
  • 75g plain flour
  • 100g chocolate chips
  • 50g hazelnuts chopped
  • Optional – 8 marshmallows

Method

Pre heat the oven to 180c.

Beat the sugar and butter until creamed. Beat in the egg (an electric hand whisk is useful here), add rest of the ingredients and then fold in by hand.

Lay a sheet of cling film on the work surface, add the cookie dough then roll into a sausage and place in the fridge for 30 minutes.

Line a large or two medium size baking trays with baking paper. Divide the mix by cutting it into 8 slices. Dot on the trays and bake for 8 to 10 minutes. If using marshmallows pop them on ½ way through cooking.
