Ingredients
- 250g butter, softened
- 250g caster sugar
- 5 eggs
- 250g self raising flour
- 1 apple, cored and grated
- 1 apple, thinly sliced
- 100ml apple juice
- 400g icing sugar, sifted
- 500ml double cream, whipped to soft peaks
Method
Preheat oven to 170c.
In an electric mixer fitted with a K beater, mix the butter and sugar until pale and white in colour.
Add the eggs, then fold in the flour and the grated apples.
Grease and line a 23cm round cake tin. Spoon the mix in then top with the sliced apples and bake for 40 minutes. Cool then split in ½ horizontally.
To make the glaze, whisk the icing sugar and juice together and drizzle over the top of the cake.
