Ingredients

  • 2 x 200g tuna loins
  • 25ml veg oil
  • Salt and pepper
  • 50ml honey
  • 1 tbsp black sesame seeds, toasted
  • 1 tbsp white sesame seeds, toasted
For the salad:
  • 1 mango, peeled and thinly sliced
  • 1 coconut, shredded
  • 1 chilli, chopped
  • 1 small bunch of mint, picked
  • 1 small bunch of coriander, picked
For the dressing:
  • 25ml sesame oil
  • 50ml soy sauce
  • 25ml yuzu juice
  • Juice of 1 lime

Method

Season the tuna loins all over then drizzle a non-stick pan with oil and place over a medium heat. When hot add the tuna loins and sear on all sides and remove from the pan.

To make the dressing, mix the soy, sesame oil, yuzu juice and lime juice.

Drizzle the honey over the tuna and roll in the toasted sesame seeds.

In a large bowl combine the salad ingredients then pour over as much dressing as you like.

To serve: pile the salad onto a platter, slice the tuna and place on top then drizzle over any remaining dressing.
