Ingredients

  • 400g tiger prawns
  • 250g sirloin steak, cut into 4 cm cubes
  • 4 chicken breasts, cubed
  • 1 tbsp veg oil
  • Salt
Sauce
  • 200ml coconut milk
  • 6 tbsp  peanut butter
  • 2 tbsp Jimmy’s Sate Sauce
  • 2 tbsp soy sauce
  • 100ml water
To serve
  • ½ a red onion
  • Coriander
  • Mint
  • Chopped chillies
  • Sliced fresh coconut, shaved

Method

Heat a BBQ until hot and the coles are white.

Skewer up the prawns, beef and chicken, drizzle in oil, season and then pop on the BBQ. They will take 2 to 3 minutes turning occasionally.

To make the sauce mix all the ingredients together in a pan and bring to a gentle simmer, whisking continuously.

Mix the herbs, chilli, onion and coconut.

To serve, pile the skewers up and then pop the sauce into a dish to dip. Pile up the salad.
