Ingredients

  • 1.6k corn fed chicken, scored
  • Salt and pepper
  • 1 large can larger, pour 1/3rd into a glass
Vegetables:
  • 1 small squash or pumpkins
  • 50 ml olive oil
  • 1 bunch broccolini
  • 2 red onions peeled and 1/4d
  • 4 small aubergines 1/2d
Dressing:
  • 5 tbs tahini
  • 200g tofu
  • 75ml olive oil
  • Salt and pepper
To serve:
  • 2 tbs white sesame seeds toasted
  • 1 small bunch coriander chopped
  • 1 small bunch mint chopped

Method

Heat a BBQ with a lid until hot and the coals are white.

Season the chicken, sit on the opened can over larger place on the bbq place the lid down and cook for 45 minutes. Cut the squash in half and remove all the seeds then cut into 4 or 5 2cm thick wedges, cut the aubergines into 1/4s. Pop all onto a large roasting tray with the onions and broccolini, toss in the olive oil and season, pop into the pizza oven for 10 minutes. ( If you don’t have a pizza oven roast in the oven set on the highest temperature)

To make the dressing whisk all the ingredients together.

To serve, spread the tahini dressing all over a platter, top with the roasted vegetables and chicken then sprinkle over sesame seeds and herbs.
