Lemon Sole with Cucumber Salad
This Lemon Sole with Cucumber Salad is a lovely light meal. The Lemon Sole is transformed into tasty goujons and the salad is fresh and light and is served with a tasty homemade dressing!
For the goujons pre-heat a deep fat fryer to 170c
Blitz together the breadcrumbs, parsley and lemon zest. Coat the sole fillets in seasoned flour, dust off any excess, then dip in egg and breadcrumb mix, deep fry for 1 to 2 minutes, drain and season with salt .
To make the dressing, whisk all ingredients together. Mix in the gherkins cucumber red onion and parsley.
