Ingredients
- 1 large corn fed chicken, spatch cocked
- 200ml olive oil
- 2 tbs smoked paprika
- 2 lemons, 1/2d
- 600g new potatoes
- 1 red pepper chopped
- 1 yellow pepper, chopped
- small bunch fresh thyme
- 200g nadjua sausage, crumbled
- 1 bulb garlic, 1/2d horizontally
- 1 red onion, peeled and sliced
- 1 tin chopped tomatoes
- 6 fresh tomatoes 1/4d
- 1 small bunch fresh basil
Method
Pre heat the oven to 200c.
In a large roasting tray cover the base with the potatoes, peppers, garlic, ½ the basil, tomatoes, nduja and onion.
Sprinkle over ½ the thyme. Drizzle in ½ the oil, season.
Pop the chicken on top, then mix the remaining olive oil, lemon juice, thyme and paprika, season. Spoon over the chicken and roast for 1 hour or until the juices run clear.
Sprinkle over remaining basil and serve.
