Ingredients

  • 600g cod fillets, cut into 2 cm strips
  • 1.5 centimetres ginger, grated
  • 50g cornflour
  • Vegetable oil for deep frying
For the sauce:
  • 1 tablespoon vegetable oil
  • 2 tablespoons brown soft sugar
  • 3 tablespoons gochujang chilli paste
  • 4 tablespoons soy sauce
  • 1 garlic clove, chopped
  • 5 centimetres piece ginger, grated
  • 2 teaspoons sesame oil
  • 2 tablespoons mint, chopped
  • 2 tablespoons coriander, chopped
  • 2 limes, juice and zest
  • 1 tablespoon black and white sesame seeds
To serve:
  • 1 tablespoon black and white sesame seeds
  • Lime wedges

Method

Heat the deep fat fryer to 180°C.

Heat a pan over a medium heat, add the oil and, when it is hot, fry the garlic and ginger.  Add all the remaining sauce ingredients, bring to the boil then gently cook for 3 minutes.

Season the cod with salt and pepper. Toss the grated ginger into the cornflour and dip the cod into the cornflour. Deep fry the coated cod for 5 minutes, until cooked, then drain onto a paper lined plate.

To serve place the cod pieces into the sauce so they are coated, place onto a plate and add more sauce. Sprinkle over sesame seeds and serve with lime wedges.
