Ingredients

  • 300g raw king prawns, peeled
  • ½ egg white
  • Splash of oil
  • Salt and pepper
  • 2 slices white bread
  • 50g sesame seeds
Jam
  • 4 chillies, diced
  • 50g caster sugar
  • Splash of white wine vinegar
  • 1 lemongrass stalk, diced finely
  • 1 tsp salt
  • 12 shell on king prawns

Method

  1. Place the prawns, egg white, salt and pepper into a food processor and blitz until a rough paste. Spread over the bread then dip in the sesame seeds. Shallow fry in vegetable oil until crisp on both sides. Cut into 4 triangles.
  2. Cook the shell on prawns on the BBQ or in a hot pan until the prawns are  charred.
  3. Meanwhile, pop all the ingredients for the jam into a saucepan and bring to the boil. Serve all together on a platter.
