Classic bake! Simnel Cake is a light fruitcake topped with marzipan. For an extra treat James has added chocolate truffles to the top too! He used chocolates from Chocolarder.
Beat the butter until light and fluffy with the sugar. Then, add the eggs, brandy and milk, mix together
Then, separately, mix the flour, spices and fruit until it is well mixed. Then, fold this into the wet mix.
Bake for 1 ¼ to 1 ½ hours until it is golden brown and firm in the middle. Allow to cool.
Place all of the ingredients together in a mixer / Kitchen Aid with a K attachment, and mix together. Do not over mix as the marzipan will become greasy.
Roll out on icing sugar and use the chocolate truffles to decorate the cake. Blow torch the top to colour, if you wish.
