Ronnie’s Apple Pie
Ronnie Murray has been been making this apple pie for many years. Ronnie thinks the secret is in the pastry where he uses double cream, this makes the pastry very flaky when cooked but is still easy to work with in its raw stage. Mark Hix opened the Tramshed in Shoreditch where this pie was a great hit and it was soon renamed Ronnie’s apple pie on the menu. Years later and it’s on the menu in many restaurants around the UK and indeed the world. Something Ronnie is very proud of.

Methi Chicken with Apple, Chilli and Walnut Chutney
Asma Khan has taken time out from her Darjeeling Express restaurant to serve up this dish of Methi Chicken with Apple, Chilli and Walnut Chutney. Methi Chicken is very similar to butter chicken...without the butter. Yoghurt, tomato and flavours of fenugreek make up the base of this dish.

The subtle sharpness of lightly poached rhubarb works brilliantly with the creamy custard when in season, and during the winter months, spiced apple compote works well too. The pastry dough for this pie is meant to be soft and fluffy in texture, so don’t freak out that it looks more like cake batter when you make it!
