Ingredients

  • 50g butter
  • 1 onion peeled and sliced
  • 3 cloves garlic, peeled and crushed to a paste
  • 2k mussels cleaned
  • 250ml white wine
  • 250ml double cream
  • Few sprigs tarragon
  • 3 bay leaves
  • 1 small bunch of parsley, chopped
To serve
  • Frites

Method

Heat a large casserole dish until hot, add the butter. When sizzling, add the onions and garlic, sweat for a few minutes. Then add the wine, cream and black pepper. Stir, pop the mussels, bay leaves and tarragon in, and give everything a big stir, pop on a lid. Cook for 4 minutes and sprinkle over some chopped parsley.

Fry the frites until crisp, drain and serve with the mussels.
